Transferring Dough
I've used various techniques for transferring proofed dough from whatever type of container it might be in over to either a dutch oven or onto a baking stone. Here are a few of the techniques that I've found useful:
Transferring dough from a banneton to hot dutch oven (Option-1)
Transferring dough from a banneton to hot dutch oven (Option 2)
Transferring dough from a cloth inside a bowl to hot dutch oven
Transferring dough from a banneton to a hot baking stone
Transferring dough from a cloth inside a bowl to a hot baking stone
Transferring dough from a banneton to hot dutch oven (Option-1)
- protect hands that could potential touch the very hot dutch oven
- carefully turn over banneton while lowering dough into dutch oven
- adjust shape
Transferring dough from a banneton to hot dutch oven (Option 2)
- flour a work surface
- quickly invert banneton onto work surface
- adjust shape
- flour both hands
- gently pick up dough on both sides (assumes very firm dough ball)
- slowly (and carefully - that dutch oven is VERY HOT) lower dough into center of dutch oven
Transferring dough from a cloth inside a bowl to hot dutch oven
- flour top of dough while in bowl
- also flour (if feasible) to a hard, flat surface
- place hard, flat surface over top of dough
- invert bowl onto hard, flat surface
- slowly and carefully peel away cloth
- adjust shape
- flour both hands
- gently pick up dough on both sides (assumes very firm dough ball)
- slowly (and carefully - that dutch oven is VERY HOT) lower dough into center of dutch oven
Transferring dough from a banneton to a hot baking stone
- place a generous amount of cornmeal on a pizza peel
- quickly invert banneton onto pizza peel
- adjust shape
- with a quick jerk, slide dough from pizza peel onto hot baking stone
Transferring dough from a cloth inside a bowl to a hot baking stone
- flour top of dough while in bowl
- also flour (if feasible) a hard, flat surface
- place hard, flat surface over top of dough
- invert bowl onto hard, flat surface
- slowly and carefully peel away cloth
- place a generous amount of cornmeal on a pizza peel
- flour both hands
- gently pick up dough on both sides
- slowly place dough onto pizza peel
- adjust shape
- with a quick jerk, slide dough from pizza peel onto hot baking stone
